Well, I started at the overview page: Hmmm. Looks from the site that the MS Excel stuff is much further along than the MSWord stuff:
HDF is still in early development. It is in the scratchpad section of the CVS (http://cvs.apache.org/viewcvs/jakarta-poi/src/scratchpad/). I guess I'd just grab the code from CVS, then, build it and generate Javadocs, and try to figure it out.
