Howdy all From the great state of TEXAS! When we have parties here in San Antonio, the best fastest snack is Bean and Cheese Tacos! Take your tortillas, (you should heat them gently for best results) spread the warmed refried beans down the center and sprinkle on the shredded (finely-is that a word? lol) cheese. Fold and cut into thirds. Only thing is I have to have the cheese melted so I will stick them in a warm oven. You have to watch to make sure the tortillas don't dry out.
Any way, I am in a grumpy grumpy mood and if I don't clean anything today, then I will do it tomorrow. I told my family I am going to live in a cave, but I am too grumpy to do it! Will still clean the kitchen as I need to bake for a meeting tonight, humm, maybe I'll make bean and cheese!
