These are machines that suck all the air out of a plastic bag or glass jar and create an airtight seal. Then your items stay fresher longer. In the case of things sealed in a plastic bag, the package also takes up much less room. I've even heard of people using them to store off-season clothes, linens, pillows, etc. (Think about how much "air" we store when we store a comforter! :-) Although you'd probably have to get a much larger one than the size for food.) I don't have one yet myself, but I will be getting one as soon as finances allow.
