It will entirely depend on your e-mail volume. The sync time should be relatively short as only new messages need any real transfer. The information already on the device will just need to transfer some small header information.

You can decrease the volume of data transmitted by setting how much of messages to download. Then if you want the rest you can click on the "download message" button within the message itself. This will save you both time and data.
