I have just tried the RFC 822 address validator at
<http://mythic-beasts.com/~pdw/cgi-bin/emailvalidate> and it indicates that
*@domain.com is indeed a valid email address. So K-9 should support this
syntax.

(For what it's worth, !#$%&'*+-/=?^_`{}|[email protected] is also a valid email
address, but good luck finding a web site that will allow you to enter it as
your contact details!)
