I would start be verifying your IMAP settings in Outlook 2007, it sounds like a sync issue between Outlook at GMail. You can probably verify this by checking your e-mail through GMail's mobile or web client and reading an e-mail and see if *that* syncs with your phone.

Then take an unread e-mail in Outlook and mark it read, see if it shows up as read or unread in the Gmail client.

If marking a message read in Outlook does *not* show it as read in the Gmail client, your issue is Outlook sync with Gmail.

If marking a message read in Gmail does *not* show it as read in K-9, your issue is Gmail sync with K-9.

Once you've narrowed it down, troubleshooting between the appropriate parties becomes easier.

You can also try a different desktop client such as Thunderbird to see if the behavior changes.
