You can get an older version of K-9 by going to:

  <https://github.com/k9mail/k-9/releases>

which is the official K-9 release site. Scroll down and you'll see
5.006, with a link to download the .apk. Note that that page has
both "alpha" and "stable". If/as you are getting your copies from
the google app store you are using "stable".

You will need to have your system "security" settings set to allow
installing apps from "unknown sources". 

I don't believe you can downgrade an app by installing the .apk of
an older version on top of an existing installed version, so I think
you'll have to uninstall/reinstall. You can use the K-9 export
settings option to make things a bit easier.
