This already sounds bad.

It is probably down at the moment - I couldn't connect to it.

You probably got me wrong. Annotating a document trhough the GATE GUI
using the KIM Client PR is another alternative of the KIM Plugin or the 
PopulationTool.
You can load a document annotate it and see the annotations physically.

One more thing, once a document is annotated and saved it will contain
certain annotations (recognized entities) and they won't change no matter
how many times you find and show the document through the WebUI.
Rather use a 'live' approach each time i.e. annotate again the same document
using KIM Plugin or GATE GUI to see if anything changes.
