Use the Adobe Acrobat Reader directly from Adobe. They have a version
for Linux on x86 that can fill in forms. I have version 7.0 on my system
(Fedora Core 5) and it works great.

HMM ... I have Adobe Acrobat Reader v 7.0.1   and I cannot fill out the
form I have. I checked under the About Adobe Plugins and it claims to have the Forms plugin installed.
When I go to save the original form (off the web site) I get a message that
says "This document does not allow you to save any changes unless you
are using Adobe Acrobat 7.0 Standard or Professional ... etc " I guess I don't have quite the right version. I will check out Adobe and see if I have to buy something.

It's not a matter of version, it's a matter of creating the form correctly in the first place. PDF documents must be created with the notion of having fields to be filled in. Examples of these are the Federal IRS tax forms which can be both filled in and saved. The California Franchise Tax Board forms can be filled in but not saved (bastards).

If you need to fill in the form but it doesn't have fields to be filled in you might be able to hack it. You could edit the PDF file directly and insert your text. You could try converting it to Postscript using something like pdftops or Ghostscript and then editing that. Or maybe if you ask whomever created the documents to send you an editable and savable version they might be able to do that. As a last resort there is always the printer and scanner. Send them as an attachment in TIFF format.
