Openoffice uses zipped multiple-file xml for it's native format[1].

You only get xhtml if you export (convert) a document or spreadsheet to
xhtml format (the other choice on the export menu is pdf)

[1] I think this is (or is related to) the open document format. If you
look at any of OO's zips for the file "mimetype", it will be a small
file containing text like "application/vnd.oasis.opendocument.text".
