I just went browsing around and found a FireFox plugin  "Mime Edit"
which allegedly adds this capability.  I have installed it and it
looks useful, but I haven't tried changing anything yet.

Apparently these options are buried within
$HOME/.mozilla/firefox/*.default/mimeTypes.rdf but this file is not
easily readable by people.
