iTunes itself? Make a playlist containing the songs he wants, and then File -> Burn Playlist to Disc.

In fact, its the only official way of doing it.  You do have to make the
playlist first, even if you want an entire album.

I don't think hymn works with modern versions of iTunes.  So, the only way
to get wavs is to burn them to CD, and rip them back in.
