Write the MP3s to the CD as you would any other file. Most CD players
that support MP3s are smart enough to look in subdirectories too.
As a side note, many DVD players will scan a DVD for MP3s and allow
playing the tunes via on-screen menus. And they will scan a data CD or
DVD for pictures and can display them on the screen.
