Doing some more research on this. KPBS (15) will continue to broadcast analog until sometime in April. KUSI (51 Independent) and KNSD (39 NBC) will broadcast analog till 12 June. So depending on your VCR, if it has a composite input that get treated the same as tunable channels, you could set up the converter box to a particular channel for the composite out and tune to KPBS, KUSI and KNSD with the normal tuner. XETV (6 WB) has said they are going to switch but so far they haven't. So I don't know what's going on there because as a Mexican station they could transmit analog until 2020. But for me I only record three stations: PBS (15 analog), FOX (5.1 digital) and NBC (39 analog) so I can get away with a converter box permanently[1] tuned to FOX and use my regular tuner for the other two for the time being.
