Well - the work done by my local copyshop uses such thin plastic that it's effectively matt. They also do large posters for me; and, certainly, I've had no problems with reflectiveness. When instructions are given for using sheets of plastic, (with or without an adhesive backing), I've also seen the suggestion that, if it's too shiny, it can be rubbed over gently with wirewool or fine sandpaper.
