Several have responded to you about how they handle census data that
will probably be more helpful to you than what I do.
I have chosen the philosophy of keeping events VERY short (one line)
and putting the longer descriptive information/stories/etc. into the
General Notes.  For census data, I uses a Census event with minimal
data (date & place of the census and some pertinent phrase in
Description).  Then I source the event and put the "nitty details"
into the Source Detail Text (rather than in the Event Notes).
Just my approach for now.  I may change as I go along (hopefully not).
