There are several ways you could do this (or something quite similar).

When the contact gives me specific info/data, say in an e-mail, I attach a 
Source Citation to the data/event using the e-mail template.  I have also 
started printing the e-mail to PDF and attaching it that way.

When it becomes apparent that we may have an ongoing correspondence, I try to 
get at least the basics of the person's descent from the ancestor of common 
interest, and enter that person with their line of descent in my database 
(particularly if the contact provides me with a lot of information).

If you create a Mailing Address entry for the person, the Address screen has a 
Notes tab where you can record anything you want, such as the surnames they are 
searching.  You can then go to Master Lists> Address Lists> Mailing and pull up 
the data that way.

What you are describing is also the purpose of a Correspondence Log, which has 
been in existence for eons, at least in paper form.  The To Do feature will 
allow you to replicate a Correspondence Log (not in the same format as one 
usually sees in paper logs, but with the same content, or more).  Note that one 
of the types of "to dos" is Correspondence; by creating a Mailing Address entry 
for the contact and attaching it to a Correspondence To Do (instead of the 
default Repository Address) you have another way of accessing the info.

So, pick the one (or more) that works best for you.  But in particular, if they 
are giving you data either through e-mail or from their online trees, they are 
a source and you should be recording them as such, IMO.

When I make a contact through Ancestry, Genes Reunited etc I usually paste the 
message into the Notes for the Individual in my tree that the contact asked 
about (or I originated to query about).  It can get difficult to remember who 
has contacted me about who.  I have thought of starting to use To Do as a way 
of storing the information because they can all be listed.

What I would really like is some sort of note that can be attached to all the 
ancestors of an Individual so I could quickly see any contacts who have the 
common ancestor. I would need to be able to edit this so I could removed some 
Individuals and add to others if I got further information.
