To answer my own question, through experimentation, I discovered the Advanced Sourcing tool does precisely what it says it will -- apply the source to any field that contains information. This includes those that already have a source.
Attention Legacy programmers, it would have been more helpful if I could have specified to only have those fields without a source receive the new source. Thank you.
