I have long used _____ JONES or Susan ______, or even _____ _____. It has never caused me any problems to do it this way, although I'm sure some will find it doesn't suit their needs. It may, for example, cause problems on web pages.
It beats LNU or similar abbreviations or words that can subsequently be misinterpreted as someone's actual name.
