Using Thunderbird (a 'real' email client as opposed to the web-based tools like
Gmail) it's very easy to see. There is an option on the View menu for Message
Source. This shows me exactly what my email client received from the Legacy 
server.

Jane's 'Trial' message was in plain text, unlike the original message from
Sherry that started all this kerfuffle, that had two copies of the visible
message inside it: one in plain text and the other in HTML. Judicious use of
fonts is one way of helping me to see whether a received message is in HTML or
plain text: I use a monospaced font for plain text messages and I override any
font specifications in an HTML message, so that I can clearly see: a Chancery
font makes this pretty conclusive :-)

What this means is that email viewers (such as Gmail or any other web-based
tool) can use the HTML version for display purposes, and fit it into the web
browser window without mucking their display up. Those of us that prefer to
converse using plain text, can also see the message as we want to see it.

Thunderbird, has 3 options for viewing messages: Original HTML, Simple HTML and
Plain text. So, even though you view a message in plain text, it doesn't mean to
say that the original message was sent as plain text. There is a very simple
algorithm to strip all HTML codes out of a message and end up with a plain text
version.

I have Thunderbird set up so that when I start a new Legacy thread (first
message of a linked sequence), or reply to a message, I send plain text. That's
a setting on the Properties of the LUG entry in my Address Book. When replies
come in, I have further set Thunderbird up to ignore any HTML and reply in plain
text. That's a general setting of the program, associated with the composition
and sending of messages.
