Jennifer,
I would just create a "New Husband" with a unknown names and add the child. The 
status of the "Marriage" could be never married and then when and if you find 
out who the father is, you have a place to enter the information.

Why would you not want a RIN for the child's father, as he is a member of this 
family group even if others believe it or not?
What surname does this child use, of which person is the sure name from?

If I have a woman married to a man and I want to add a child to her where
the existing spouse is not the child's father, how do I do it? I don't want
to end up with an RIN for the child's unknown father.

If I unlink the existing husband I can do it, but that wipes out the
marriage information, so when I re-link him, I have to enter the marriage
information again.
