In what way does Legacy "not really like it"? I have children with different names to their parents and people with hyphenated names and Legacy doesn't have a problem with that. The only thing which would not fit with *me* in your arrangement is that the children were perhaps not actually ever named Coles-Lane but firstly as Coles and later as Lane. Personally, I would use Coles as the main name because that is the birth name, I'd put Lane as an AKA and of course have an Adoption Event incorporating the change of name information. But that's just how I'd do it.
