If I assume you are talking about the Description field of a Census Event, I always leave it blank. I normally create an Occupation Event for the person based upon the Census and use the Description field as such: Farmer, Coal Miner, Grocery Storage Merchant, Carpenter.
The Occupation Event would read like this: He worked as a Carpenter on 21 Aug 1850 in Hocking, Athens Co, OH, USA. For a Residence Event, I would use the street address in the Description event. In many cases, you don't have to use the Description field and that is OK.
