Win 10 does use the Edge browser as the default reader of .pdf documents. However, you can change that default either when installing a different Acrobat application (I use Acrobat Pro) or later. Occasionally when adding a Win 10 patch I have had that pdf default changed.
If you have an application you use as your default pdf software and that default has changed, go to System > Default apps > Choose default apps by file type. Find the listing for pdf and click on the app already selected to display a Choose an app list and select your preferred pdf software. If so, the Win 10 version of Internet Explorer is called 'Edge', symbolized by and "E" and has an imbedded pdf reader.
