Is 'murican spelling enforced now ?

Mostly.  We do need to be consistent.

Not wanting to start a huge debate here, but this quite surprises me, as linuxfromscratch was started by a dutch person.

To my knowledge, all of Europe is taught the British spelling as being the correct one, while the American spelling is considered a local adjustment only valid in the U.S.

Or have I missed something since going to school?
