Is 'murican spelling enforced now ?

Mostly. We do need to be consistent.

Not wanting to start a huge debate here, but this quite surprises me, as
linuxfromscratch was started by a dutch person.

To my knowledge, all of Europe is taught the British spelling as being
the correct one, while the American spelling is considered a local
adjustment only valid in the U.S.

Or have I missed something since going to school?

Gerard stopped activly editing over 10 years ago, although he still
supports the project in other ways. Actually he is a Canadian citizen
and I believe used US English from the beginning.

Well, you certainly know better than me, I always got the impression he was from the Netherlands. Funnily enough, I just checked and found that "behaviour" is also the correct spelling in Canada.

But I'll stop here, you're the editor, so of course your decision stands. It's not really a big problem for me.

Kind regards
Tim
