Go to Tools > Options > LibreOffice Advanced. Click on "Open Expert Configuration". In that window, open the tree "org.openoffice.VCL" and therein "DefaultFonts". Find your language or use "en" for Latin languages. Each of the items has a list of font names as value. For example for me SYMBOL contains StarSymbol;OpenSymbol;Arial Unicode MS;StarBats;Zapf Dingbats;WingDings;Symbol The listed fonts are used in the preference from left to right. Double-click the Value. Then you can edit the string. The default font for texts in Writer is LATIN_TEXT. Add Liberation Sans; at the left of that string. Restart LibreOffice. Start a new text document without using a template. The default font will now be "Liberation Sans". I have no preference in regard of "serif" vs "san serif". A font affects the readability of text and creates certain expectations in the reader regarding the text. Therefore, there is no font that is equally suitable for all use cases.
