That raises some significant challenges with the existing menus - as you outline below. I like both your ideas for multi-key shortcuts [ we want to get those emacs users included ], and/or configuring menu shortcuts [ I imagine that could already be done by disabling / renaming / adding menu items with the shortcut you want ? ].
