I find it strange you would say that for a few reasons:

1) The packages are the first things shown on the download page.
2) The same page says "If you're a technology enthusiast, early adopter or
power user, this version is for you!" - that includes me.
3) Most distros I've used leave you with the version of LibreOffice that was
current at the time of its release. If I didn't update myself, I'd always be
out-of-date.

To answer your question:

I uninstalled LO 7.2.5 from within Synaptic by searching for all instances of
LibreOffice7 and marking them for 'Complete Removal'.
I extracted the 3 LibreOffice archives I downloaded from the website. Then I
opened the folders as Administrator and did 'dpkg -i *.deb' for each one
starting with the main package, then doing the language pack and the help pack.
I have done it this way for many years and never had any problem. Because of
this I have always had confidence it will be fine.
