That happens too... no one wants to "officially" release it yet because it was either tossed in at the last minute, or they didn't get it working until the last minute, and it never really got tested and vetted.
And, occasionally, from other places I've been, I know developers have their own pet feature that sometimes they'll toss in, but it's not official. I know on some products I've added a very useful shortcut, but it never went through the official process to be included, because sometimes that's an involved process involving 4 departments and spec approval and everything else, not to mention money for testing, and if it's a simple thing, sometimes it just is easier to do it. A feature that takes two minutes to implement and has no risk might require two days of meetings and spec approval to get officially in there.
But for the original question, I don't think for the most part that there's anything they "don't want you to know about", rather just stuff that hasn't been made official, either because it was too last-minute to be tested, vetted, and approved, or isn't fully functional yet and not ready for prime time.
