to sort of answer your original question, DirectOS looks through your 
system's registry for the default email server, take a look at the 
scripts you use that are provided with DirectEmail to see exactly 
what is looked for and where.

If the company has a web server that can be used then that would be 
the best solution.  if the mail is being sent to third-parties then 
make sure that they allow relaying of messages (which they probably 
won't want to allow).   there are public mailservers, but I don't 
know of any offhand.

just curious, does the message have to be sent as an email?  have you 
thought about just doing a postNetText to their server (assuming that 
you are collecting info to send to the company)?  if it is always 
going to the same place then a simple postNetText might be all you 
need (as well as backend of course)
