Apache by itself is quite lean and could run comfortably in a 64MB virtual machine (maybe less). If there is anything else (like PHP or MySQL), that will add to the storage requirements.
Jetty, being a servlet engine might be wildcard (as WebSphere virtual machines typically are). I might start with 512MB machines and monitor it from there.
