I was thinking more of rsync without any mounting at all. If the volumes are mis-sized and z/VM won't work with them as they are, I don't see too many options that don't involve moving the data twice. Either use afio to dump everything to tape and read it back in on the z/VM guest, or use some sort of network-based copying. I use rsync a lot and am very comfortable with it. There are likely better ways of moving many GB of data over the network, but I can't offer any personal experience there.
If moving the data multiple times doesn't bother you, then get some additional volumes that are accessible from both systems, create file systems on them from the z/VM guest (just to make sure the guest will work with them properly), and move the data from LPAR disks to the intermediate disks and then to z/VM guest disks.
