We use lvm for everything but /boot. No problems so far.
And yes we user reiserfs. Haven't seen a reason not to use it .. yet :)
I moved off reiserfs in the VM environment. I have been seeing file
corruptions for a while. We are now on ext3 for most of our production
systems.
