The Redbook "z/VM an Linux on IBM System z, The Virtualization Cookbook" outlines a more tailored software install that cuts down what is installed greatly.
For me, I only install the "Server Base" and "32 Bit run time" patterns. Some other things start being brought in, when needed, but my root is down to 983MB down from 2,200 MB with the default install.
