Well, yeah, but you should do that by setting your EDITOR environment
variable and running visudo (or, I guess, sudoedit), which, despite
the name, does respect the value of $EDITOR. It also does all the
appropriate locking and atomic updating to ensure that the file is
safely editing, which just smacking a text editor onto /etc/sudoers
doesn't.
