I know that there are a number of TSM shops that converted from the z/OS version to the Linux on z version and from what I remember they are running just fine.
Disk would be either FICON attached or FCP attached. There have been some excellent presentations at SHARE by folks from Nationwide on their implementation of linux on z using FCP in an IFL by itself or under z/VM. You can attach standard SAN storage (SCSI?) to a z series and access it via an FCP card. An FCP card is basically a FICON channel with specialized microcode.
