mail isn't a problem, outgoing mail gets queued until the queue is run (via sendmail -q), and local mail is delivered immediatelty. Connecting from clients is the problem. When I first installed the linux mail server for the school, I made the big mistake of not documenting it properly. I have tried to mirror the system so we can test modifications on a standby model, and write a procedure on the installation method. This is where I'm having trouble. Although I have learnt a great deal more since the first installation - I can't reproduce everything properly!
