Use sendmail instead of mail. The -f option is available in sendmail.

Yet another think you can do is to put the header of the message also into 
textfile containing the message like this :
-------------------------------------------
From: [EMAIL PROTECTED]
To: [EMAIL PROTECTED]
Subject: Whatever

Now the body of the message
--------------------------------
A blank line between the header & body is mandatory. Now if you invoke
sendmail with the -t option - i.e "sendmail -t <yourmsg.txt", the mail will
be sent to the To: address you specified in the text file, and the From: 
header also will remain whatever is in the msg text. (The message envelope 
will still show "From" as root - but it generally doesn't matter. If you 
want the envelope also to show the address you want, use the -f option of
sendmail.)
