Hmm.. ?? My sendmail setup doesn't seem to use inetd at all ?

My bet is on DNS lookup failure - At startup sendmail tries to reverse
lookup all network interfaces to find valid hostnames and if you haven't
setup your DNS reverse zones properly, this can cause a problem.

Enable the Option "DontProbeInterfaces" in sendmail.cf to avoid this lookup.
(Remove the # in front of this option). In this case you should ensure that
all your domain names/aliases are listed in your .cf file with Cw directives
(or in /etc/mail/sendmail.cw if you have the use_cw_file feature turned on).
