You _can_ do body filtering for specified words (but easier to filter on
known spamware header patterns etc).

sendmail - http://www.digitalanswers.org/ - look at check_local

postfix - there is a sample rc file for body filtering in /etc/postfix

exim - google for it.  much more elegant than postfix at body filtering
(stuff like accepting the first few bytes of a mail and scanning those for
patterns ... useful in the case of - say - sircam, rather than receiving the
whole mail and then scanning it)

qmail - should be available - poke around google
