Hmm. Versions of what??

If RedHat, I'd say all of them are stable enough. But as the minor
version number increases, certain things get better and better. Hence,
I use 7.3 on all my servers. I notice there are drastic changes at various
places with increase in major number (Apache 2.0 with 8.0, for example).
