Does it mean that anyone can configure their mail client to use xyz.com as
their smtp server and send mails to the users of xyz.com. If this is the
case and if I specifically set a reject rule to the connecting IP in access
file, will the smtp server reject the mail.

Are the below statements right.
  -  Relay control based on source => access file
  -  Relay control based on destination => relay-domains
  -  Accepting its own mails => localhostnames
