I can only answer the Linux half of your question. Yes, you enter the IP
address of the NT host as the default gateway on your Linux host. You do
this with the "route" command ("man route" for the details), and the command
will look approximately like this:

route add gw default 192.168.23.42 eth0

replacing the abve address with the right one for your LAN (and replacing
eth0 if you use a different interface). You can put this in an appropriate
rc* script (probably /etc/rc#/rc.local, replacing # with whatever runlevel
you are starting at - probably 2).

The NT server will need to be enabled as a router, and a Linux list isn't
the best place to turn to for this expertise. From the standpoint of Linux,
there is nothing special about NT routers as contrasted to any other
routers. Depending on the details of your LAN's addressing, you may need to
run NAT (Network Address Translation) software on the NT router. The Linux
version of this is IP Masquerading; I don't know what the NT equivalent is
(or what it might cost).

As to what you found at the Microsoft site ... well, what do you expect
Microsoft to say? You don't need to be a Microsoft basher to suggest that
their sales material is less than impartial. I suggest you try Linux and
decide for yourself which OS better meets your actual needs (or if a mixed
network lets you enjoy the strengths of both).
