The "X server output stuff" is being written to stderr, not stdout. To
redirect it to the file, change your command to read
XF86_Mach64 -probeonly 2> xout
^
Redirects stderr
For these purposes,
1 = stdout (and is the default if nothing is specified)
2 = stderr
0 = stdin (the keyboard in a console setup)
