It all depends on what kind of security you want.
If you only want that your data is safe,
then your original plan is sufficient.
If you want that your system stays up then you need to raid the swap too.

Hardware raid, Mylex Acceleraid 250, 5 x 9 GB Ultra LVD disk

Havn't yet desided how to boot-up the beast.  I have couple of LS-120
hanging about, maybe i use those, if they work (BTW, can you boot Linux from
LS-120 ?).

Maybe I'll get one of those PCMCIA non-volatile ramdisks as boot-device.
