I had a very similar problem with the Belkin adapter using the mct_u232 and never could get it to work. I had very similar problems - minicom would freeze up after sending a few characters.
One thing I noticed is that when the adapter was attached to a windows box and working, the tx and rx lights would blink at appropriate times, but when I attached it to the linux box, only the "link" light would flash when I was trying to send data. Are you experiencing a similar problem?
