I have always felt that it is ideal for repetative tasks.
If you always type a letter to go on a certain letterhead or do the minutes for a committee,
you set up a template and away you go.
The content is what you need to concentrate on because the
style is handled for you.
It's also ideal for when you need to automatically generate a document from a script/program. Outputting LaTeX source is relatively easy. I'm not sure you could output MS .doc format very easily. You could probably do openoffice.org XML format OK, but LaTeX is still magnitudes easier than that for autmatically generated documents.
