not quite sure what you mean by a "stream"

you can take the composite video out of the sky decoder and plug it into
an ordinary capture card, and then use a variety of apps to record or
play it:

xawtv (watching & recording)
zapping (watching, maybe recording too?)
mplayer (through a foul combination of command line options)
mencoder (ditto, to record)
kino has a v4l input plugin (for capturing then editing)

bascially anything that has a videoforlinux (v4l) capability.

but maybe thats not what you were after?
