We can, but the binary packages may be a little out of date by then. The bin packages are only updated on a release. One reason we are happy with them for the gentoo fest is that they were released on 28 April, based on a package database frozen on 13 April, and we will be installing on 15 May, ie about a months of security fixes at most. By 17 July they will be about a week away from another binary release. If people want it at the main installfest I am happy to oblige :-) People will possibly have a lot of updating to do. Maybe we can turn one of those labs into a compile farm?
